Simple Asparagus Salad

The Penny Savvy Plant-based salad of the month for March was a delicious and nutritious, appropriately spring green Asparagus and Pea salad by the amazing Love & Lemons blog.
This salad came together so nicely and featured all the nutrients and protein included in asparagus, peas, radishes, lemon and avocado! This salad also kept very well in the refrigerator (stored aside from the dressing) for at least a week! Prep time was also super easy!
That said, maybe you're looking for a little more of a salad on the go or something to prepare even faster! If so, I have a pared down version of this salad idea for you! This is still based on the delicious Love & Lemons version which I recommend, but works too in a pinch and is a delicious snack you may have never thought to make!
Simple Asparagus Salad or Side Dish
Ingredients:
Asparagus
Violife Feta or other plant-based feta
Pine nuts
Directions:
Start out by "blanching" the asparagus (This is MUCH easier than it sounds). In order to do this, bring a pot of water to a boil and then add your rinsed and washed asparagus to the pot once boiling. Let boil for about 2-3 minutes. This tends to be enough time to get even thicker parts soft enough to enjoy without overcooking it. (Note: this will be less crisp than asparagus in a traditional salad and can also be used as a delicious savory side dish).
Drain the asparagus and add to the dish or container of your choice.
Top with feta & pine nuts. You'll be surprised just how filling this salad / side dish is! The feta is so savory and pairs so well with the asparagus in flavor that you may not even need a dressing at all!

Avocado dressing (optional)
Garlic and Lemon Dressing
Roasted Shallot Dressing
