Nutritious Taco Bell Inspired Wrap Filling




This make-ahead wrap filling is so fun to throw together and keep in the refrigerator to fill tortillas for the week! It makes a great lunch paired with a veggie soup or you could also enjoy few for dinner. Paired with a soft tortilla this simple healthy filling makes energizing healthy snack at anytime that will make you feel like you stopped at Taco Bell (but with all the better tasting benefits of homemade or organic ingredients)! It's great over some rice with an avocado on the side too.


Ingredients:

Red Onion

Celery

Black Beans

Corn

Chickpeas (optional)

Lightly baked or air fried tofu (optional)


Pair with: Buffalo style hot sauce (this gives the taco bell taste:). If you don't have buffalo style hot sauce, any hot sauce will be tasty too. Better yet, if you have taco bell sauce packets lying around that you want to use up, this is the perfect excuse. Also pair with tortilla wraps! Ice berg lettuce and plant-based cheddar shreds pair nicely here too but aren't necessary! If you're adding cheese or lettuce, I recommend storing them separately from the filling.


Preparing the filling: Cut celery into slices, chop or dice red onions. Add them to your refrigerator storage container and toss to mix.  Rinse and dry canned corn, black beans, and chickpeas and add desired amounts of each to your container. Toss to mix. Add a small amount of hot sauce ahead and toss that to mix in with ingredients too. This coupled with the onion can help with freshness. Just be careful to not add too much hot sauce. Save the rest for freshly adding to your tortilla wraps or bowls.


This filling will stay fresh in the refrigerator for about a week. You can make as much or as little as you'd like but just bear in mind that to keep it fresh without waste, you likely do not want to prepare more than you can eat in a week ahead of time.



Notes: In the spirit of keeping it very simple (and really tasting like Taco Bell), tomato, lime and cilantro are not required in this filling, though you could add it if you like!
